almond pesto
With a haze of winter sun striking through today, I started craving something fresh and reminiscent of summer days past. 
I love this one-step pesto as it has a more subtle flavour than expected. The addition of almonds gives a naturally creamy texture to the pesto; use flaked almonds to speed up the recipe as with whole almonds they will need to be softened in a dry pan. Tangy lemon zest and juice is fresh and delicious with the basil. 
A simple, fresh and delicious recipe you will use time and time again. 
Serves 2
50g flaked almonds 
30g fresh basil, including stalks 
1 garlic clove
150ml good quality extra virgin olive oil 
Zest and juice of 1 unwaxed lemon
Generous pinch of sea salt and pepper 
1. Place all of the ingredients in a high-powered blender. Blend on high until almost smooth (a few small lumps remaining are delicious!)
